Deep Fried Croissant French Toast

One Sunday morning, I had a craving for French Toast.  I got out all of the ingredients but then realized that I didn’t have any bread.  What to do??  Well, lo and behold I noticed that I had a couple of croissants, and this recipe was born.  I hope you enjoy it.

Ingredients

  • 5 eggs, beaten
  • 2 Tbs vanilla extract
  • 1 tsp cardamon, or to taste
  • 1 tsp cinnamon, or to taste
  • 2 Tbs heavy whipping cream
  • 2 croissants, cut into thirds

Directions

  • Heat oil to 350 degrees in heavy bottom or cast-iron pan.
  • Using an immersion blender, mix all ingredients except for the croissants
  • Once fully mixed, soak the cut croissants in the batter.
  • Gently remove croissants from batter and deep fry until golden brown.
  • Serve with warmed syrup, butter, and/or powdered sugar.
