Asian Cucumber

Ingredients

  • 2 English cucumbers
  • 8 oz rice wine vinegar
  • 6 oz white sugar
  • 3 tbsp grated ginger
  • white sesame seeds for garnish

Instructions

  • Split cucumber in half lengthwise and cut into ½ inch chunks.  Set aside.
  • Add rest of ingredients to food processor
  • Puree for a minimum of 2 minutes
  • Combine puree and cucumbers to bowl and marinate for a minimum of 4 hours.
  • Garnish with white sesame seeds
