This appetizer is a great way to start any meal. Whether it’s a holiday dinner or a weeknight dinner, these are easy to make, and are so good.
Ingredients
- 4 Zucchinis, quartered lengthwise
- 1/2 cup freshly grated Parmesan
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 2-3 teaspoons olive oil
- 2 Tablespoons chopped fresh parsley leaves, if desired
Directions
- Preheat oven to 350 degrees. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
- In a small bowl, add Parmesan, thyme, oregano, basil and garlic powder. Add salt and pepper to taste (remember that Parmesan cheese is a salty cheese. Be careful when adding more.). Combine all ingredients thoroughly.
- Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown.
- Serve immediately, garnished with parsley, if desired.

This was a great dish. My family got so bored with asparagus, so I made this dish and believe me it was a great change and a big hit. I only did 4 Zucchini and it was not enough so the next time I will double it. All was gone in 15 minutes, they love them.
