Cinnamon Brioche Bread

Tired of Banana Bread?  Need to try something new?  This is the recipe for you.  While this bakes, your kitchen will fill with the aroma of cinnamon.  The hardest part is waiting for the bread to come out of the oven.  Bake a loaf to enjoy with breakfast, as a snack or to bring to the next office potluck.  You will be the envy of the office and your family will want this every morning.
Ingredients

  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons cinnamon
  • 1 cup butter, room temperature
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 2 1/2 teaspoons vanilla
  • 1 cup sour cream
  • 1 1/2 cup or 12 oz. cinnamon chips
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 2 teaspoons cinnamon

Directions

  • Preheat oven to 350º Spray the bottom of 5 mini loaf pans with cooking spray with flour.
  • If you don’t have the mini loaf pans, you can also use 2 5×9 loaf pans.  The cooking time will need to be increase to 60 – 70 minutes.
  • In a medium bowl, whisk together 3 cups flour, baking powder, salt and 2 1/4 teaspoons of cinnamon. Set aside.
  • In a large bowl, cream together butter and 2 cups sugar about two minutes.   Beat the eggs in a large measuring cup.  Once the butter and sugar is fluffy, add the eggs, vanilla and sour cream and mix to combine. Add flour mixture and mix just until combine. Do not overmix. Coat the cinnamon chips with 2 tablespoons flour and stir into batter.
  • Add batter to the greased pansno more than 2/3 full.  Combine 2 tablespoons sugar and 2 teaspoons cinnamon in a small bowl and sprinkle over the top of the batter in the pans.
  • Bake for 35 to 40 minutes if using mini loaf pans or 60 – 70 min if using 5×9 loaf pans until a toothpick inserted into a crack in the center of the loaf comes clean. Remove from oven and let cool 10 minutes before removing from pan. Remove from pan and let cool completely before serving.

**Suggestion**
Many people love getting baked goods for gifts.  Once the bread has cooled completely, wrap each loaf in your choice of plastic wrap and a bow.  Be careful though.  Once they taste this wonderful bread, they will keep asking for more!  Enjoy!

    1. Updating to say that I tried this recipe over the weekend, and it turned out ABSOLUTELY AMAZING!! Cinnamon chips can be harder to find these days, but they are out there, and there are also recipes out there to make your own–super simple to do! It’s definitely worth the effort to find them. You get these amazing little pockets of cinnamon/sugar goodness!

  1. Hi Old Man, I love this recipe. My Mom would make us kids cinnamon toast, these little air pocket are wonderful and are so easy to make. They leave a great smell in the kitchen. I made them for Thanksgiving and they were gone in no time. All my guests loved them. The recipe was so easy to follow❤. Looking forward to to making some of your soup.
