Ingredients

  • 2 English cucumbers
  • 8 oz. rice wine vinegar
  • 6 oz. white sugar
  • 3 Tablespoons grated ginger
  • White sesame seeds for garnish

Directions

  • Split cucumber in half lengthwise and cut into 1/2 inch chunks.  Set aside.
  • Add rest of ingredients to food processor
  • Puree for a minimum of 2 minutes
  • Combine puree and cucumbers to bowl and marinate for a minimum of 4 hours.
  • Garnish with white sesame seeds
