Ingredients
- 2 English cucumbers
- 8 oz. rice wine vinegar
- 6 oz. white sugar
- 3 Tablespoons grated ginger
- White sesame seeds for garnish
Directions
- Split cucumber in half lengthwise and cut into 1/2 inch chunks. Set aside.
- Add rest of ingredients to food processor
- Puree for a minimum of 2 minutes
- Combine puree and cucumbers to bowl and marinate for a minimum of 4 hours.
- Garnish with white sesame seeds
Asian Cucumber
Servings: 2 people

I use this as a side dish sometimes.
My twist on this is I use pear vinaigrette
