Macaroni and Cheese

Macaroni & Cheese… the ultimate comfort food.  This will take you from childhood favorite to an adult classic.  This has class, finesse and with high society written all over it.  We’ve taken the best cheese and champagne and combined with the best bacon.  Enjoy this great comfort food.

Ingredients

  • 2 cups of whole milk
  • 1 cup of water
  • 1/2 cup of champagne
  • 1 lb. shredded sharp cheddar cheese
  • 1 lb. Tri-Color Rotini
  • 5 teaspoons of sodium citrate
  • 1/2 Tablespoon of powdered garlic, or to taste
  • 8 slices of thick cut bacon, cooked and chopped
  • 1 medium fresh jalapeno, chopped
  • Salt & pepper to taste

Directions

  • Boil pasta according to package directions
  • In a medium saucepan, heat the milk, water & champagne until it starts to simmer, do not let it boil.
  • Add the cheese, sodium citrate, garlic, salt and pepper.  Continue stirring until cheese is completely melted.  
  • Once cheese is melted, add bacon and jalapeno.
  • Add drained pasta and serve.

  1. I tried this Mac and Cheese and it is delicious! The champagne gives the sauce a subtle flavor, better than an ordinary white bechamel.
    The bacon and the jalapeño take it over the top!
