Xinjiang Spice Blend

Xinjiang Spice Blend is a bold, aromatic mix inspired by the flavors of Northwestern China, particularly the Xinjiang region, where cumin and chili are signature elements of the cuisine. This spice blend is especially well-suited for meats like lamb, beef, and chicken, bringing warmth, smokiness, and a touch of numbing spice. Toasting the cumin seeds and Szechuan peppercorns is a key step—it unlocks their essential oils and intensifies the depth of flavor.

What sets this blend apart is the use of Szechuan chili flakes and peppercorns, which lend a unique heat and tingly sensation known as “mala.” Combined with black pepper, chili powder, and smoked sea salt (or bacon sea salt for a richer twist), the spice mix achieves a balance of smoky, spicy, and slightly citrusy notes. Old Bay seasoning adds a subtle savory complexity, while ginger and garlic powders contribute earthiness and warmth.

This versatile blend can be used as a dry rub, seasoning for stir-fries, or even sprinkled over roasted vegetables for a kick of flavor. If you’re unable to find the Szechuan-specific ingredients at your local store, Asian markets or online retailers like Amazon are excellent resources. Once mixed, store the spice blend in an airtight container in a cool, dry place and enjoy the bold, authentic flavors of Xinjiang in your home cooking.

This spice blend is perfect for just about any meat you can think of.  It does include a couple of spices (Szechuan peppercorns & Szechuan chili flakes) that may not be available in your local market.  The best place would be an Asian market but if there isn’t one near you, it can be ordered off of Amazon.  

Ingredients

  • 1/4 cup cumin seed
  • 2 Tbs dried Szechuan chili flakes
  • 2 Tbs black pepper
  • 1 Tbs Szechuan peppercorns
  • 1 Tbs ginger powder
  • 1 Tbs garlic powder
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp smoked sea salt or bacon sea salt
  • 1 tsp Old Bay Seasoning

Directions

  •  In a medium saucepan, toast the cumin seed & Szechuan peppercorns & cumin seed until fragrant.  
  • Add all ingredients except for ginger, garlic & chili powders to a spice grinder and grind until ground into a powder
  • Pour the powder into a bowl and add the ginger, garlic & chili powders.  Stir until well combined.
  • Put into an air-tight container and store in a cool, dry place.
