The Story Behind the Flame
Welcome to Old Man Chef. I am trained as a French American Chef in Seattle, WA USA.
I come from a large Italian family that likes to eat! I also have a personal interest in healthy cooking techniques using ingredients that are fresh and recognizable (you will never see ingredients such as monosodium glutamate in my recipes). My philosophy is to create delicious flavors with minimal salt usage.

Here you will find a collection of videos ranging from different knife cuts to recipes, as well as explanations of different cooking techniques.
I’ll guide you through the world of professional chef’s knives—showing you how to select the ones that suit your cooking style, and teaching you how to care for and protect your knife investment for the long haul.
I’ll be sharing ways to cook steaks, pork chops, fish, how to make a Cioppino, Risotto, Zabaione to name a few. Also, how to make different starters & sauces, including Bechamel, Espagnole, & Hollandaise (part of the Five Mother Sauces) and Consommé, as well as the different seasonings and spices, including basil, oregano, thyme, etc.
From time to time, I will be reviewing local (Seattle, WA area) restaurants. As a Christian Chef, God has put it on my heart to only give positive reviews. You will not see negative reviews on this website.
